Oat Love Waffles with a Berry Jam


Lift your brunch game with a heart shaped waffle maker. Then pack it with all the goodness to start your day on a happy healthful note.

These waffles are made with bananas and oats and I am not kidding - they are delicious. So if you thought your over-ripe bananas were destined for banana bread or smoothies, time to update.


Servings 4


Waffle Ingredients:

1 Cup Rolled Oats

2 Medium Sized Ripe Bananas

1 Egg

1 Teaspoon Vanilla Extract

1 Teaspoon Ground Cinnamon

1 Teaspoon Baking Powder


Berry Jam Ingredients:

500g Fresh or Frozen Mixed Berries

1/4 Cup Room Temperature Water

1 Teaspoon Vanilla Extract

1 Teaspoon Ground Cinnamon

1 Tablespoon Manuka Honey



Method:

In a pot over a medium heat, add all of the berries and the water. Stir well to combine.

Turn heat down to low and allow the berries to breakdown into a thick consistency. After about 5-7 minutes, remove from heat, stir through the cinnamon, Manuka honey and vanilla extract.

Set aside.

Add all of the waffle ingredients to a blender.

Blitz until all the ingredients are combined and the consistency is a smooth batter.

If your waffle maker is non- stick omit this step, otherwise lightly line the waffle sections with a small amount of extra virgin olive oil.

Place the batter in the waffle maker and cook for 10 minutes - or until they are just browned and cooked through to the centre.


To serve:

Serve the waffles immediately so they stay warm and fluffy.

Drizzle with a generous amount of the berry jam and fresh berries.

Eat and enjoy or for extra sweetness, drizzle extra Manuka honey over the top.
